DENOMINATION: Organic natural sweet wine
MATCHING: beautifully matched with aged cheeses. Alternatively, for a tasteful dessert, try it out with dark chocolate, biscuits or cakes.
CHARACTERISTICS OF THE VINES: 18 year old vines, 4000 plants per hectare, cordon trained and spur-pruned.
AMPELOGRAPHIC BASE: 100% Sangiovese (various clones)
VINIFICATION TECHNIQUES: After drying for around one month and once the sugar concentration of 350 g/l has been reached, the grapes ferment in fourth-passage French oak barriques, initially on their skins. Fermentation stops naturally leaving a residual sugar of 80 g/l.
AGING: 8 months in fourth-passage French oak barriques and at least 6 months in the bottle.
LONGEVITY: at least 10 years
