DENOMINATION: Romagna DOC Sangiovese Superiore
MATCHING: Perfect to be tasted with charcuterie or fresh cheese. It goes well with pizza and pasta and it is fantastic with fish dishes.
CHARACTERISTICS OF THE VINES: 15 year old vines, 4000 plants per hectare, cordon trained and spur-pruned.
AMPELOGRAPHIC BASE: 100% Sangiovese (various clones)
VINIFICATION TECHNIQUES: Sangiovese grapes of various clones are fermented together. Fermentation and subsequent maceration occur in stainless steel vats at a controlled temperature of around 22 °C. Contact with the skins lasts around 10 days; malolactic fermentation follows.
AGING: 4 months in stainless steel vats and at least 2 months in the bottle.
LONGEVITY: 3 years
